Avocados are a staple in my diet, so I like to find new ways to eat them. Don’t get me wrong, I love a perfectly ripe avocado with a little pink Himalayan seat salt and black pepper. That’s my go to snack! But this Smashed White Bean and Avocado Open-Face Sandwich is so hearty, you can enjoy it for lunch.

This works best with a ripe avocado. The beans and avocado combine easily by mashing with the back of a fork. Combine until the consistency of your liking is reached. I personally like it a little chunky.

The beauty of this sandwich is that it requires simple ingredients. However, all of these ingredients are incredibly nutrient dense. My favorite addition to any sandwich, salad, or wrap with sprouts. Broccoli sprouts happen to be my favorite; they are amazing for your health. These sprouts contain sulforaphane, which is a cancer-fighting compound. They contain 10-100x as much sulforaphane than regular broccoli plants!

Don’t be afraid to pile everything on! The avocado and beans stick to the bread, so you don’t have to worry about anything sliding off when you take a bite.

Smashed White Bean and Avocado Open-Face Sandwich

This open-face sandwich makes for a delicious and healthy light lunch or hearty snack. It's packed full of healthy fats from avocado and protein and fiber from chickpeas.

Ingredients
  

  • 1 slice Gluten-Free or Sprouted Bread
  • ½ Avocado
  • ¼ cup Cannellini Beans
  • ¼ Red Bell Pepper
  • 1 handful of Sprouts
  • Salt and Pepper to taste

Instructions
 

  • Toast slice of bread.
  • Scoop out half an avocado and put into a small bowl .
  • Add ¼ cup cannellini beans to the bowl with the avocado .
  • Season with a little garlic powder, pink Himalayan sea salt, and black pepper .
  • Mash with the back of a fork until combined .
  • Spoon mixture onto the piece of bread – don’t be afraid to pile it on!
  • Add slices of red bell pepper and a handful of sprouts.
