Who doesn’t love a dessert that’s not only tasty but also healthy for you?! I always have a sweet tooth after dinner, so these little cacao truffles come in handy when that hour strikes. I used to think dark chocolate was so bitter but decided back in high school (which seems like ages ago) to acquire a taste for it because I knew it was WAY healthier than milk chocolate. Now, I crave the rich cacao taste of dark chocolate…who would have thought! To get all of cacao’s wonderful health benefits, make sure you are eating dark chocolate that is 70% cacao or higher.

Ok, on to these little bites of chocolatey goodness. The beauty of these truffles is that the sugar in them is 100% natural. That means you can feel great about eating them. Also, the nuts are an excellent source of healthy fat. Total win-win!

These taste the best when stored in the freezer. Just pop one (or five) out at a time when you want a little chocolate fix!

Vegan Coconut Cacao Truffles

These truffles are vegan, gluten-free and simply delicious. Made with whole ingredients like dates, cacao, almonds, and coconut. Great for an energy-boosting snack or healthy dessert.

Servings 12 truffles

Ingredients
  

  • ¾ cup Raw Cacao Powder
  • 1 cup Almonds, Walnuts, or Pecans
  • cup Maple Syrup or Coconut Nectar
  • 1 Tbs Coconut Oil melted
  • ½ cup Medjool Dates pitted
  • tsp Salt
  • Shredded Coconut

Instructions
 

  • Grind up nuts in a food processor until they are fine .
  • Add dates to the food processor and mix thoroughly .
  • Pour nut and date mixture into a bowl.
  • Add coconut nectar/maple syrup, coconut oil, and sea salt .
  • Form 1 inch balls with your hands and roll in shredded coconut .

Notes

Store in a container in the freezer.

    New to vegan baking…quick and easy and one of the few recipes with all natural ingredients…highly successful with my “very particular vegan and the whole family…had a hard time keeping up with the empty “Vegan” cookie tin!! Thank you for sharing!
