CHOCOLATE DATE BLONDIE BARS 🍫 🥜

Bloodies have always been one of my favorite desserts. There’s something about a bar that I just love👌🏻

These bloodies are extra special because they’re stuffed with chopped @simplygum chocolate date salted peanut bars 🤤

RECIPE:
1 cup almond flour
1/2 rolled oats
1/2 tsp baking soda
Pinch of salt
Chocolate chips (measure with your heart)
4 @simplygum chocolate salted peanut date bars (chopped up)
2 eggs (or 2 flax eggs)
3/4 cup coconut sugar
3/4 cup creamy peanut butter (could sub any nut butter)
1/4 cup avocado or coconut oil
1 tsp vanilla

1. Preheat oven to 350F. Add all wet ingredients to a large mixing bowl and mix thoroughly.
2. Add all dry ingredients to the wet ingredients and mix to combine.
3. Grease an 8x8 baking pan with coconut or avocado oil.
4. Add the batter to the prepared pan and spread out evenly.
5. Bake for 20-23 min or until barely golden brown.
6. Let blondies cool for at least 15 minutes before cutting.

SWEET POTATO CHOCOLATE MOUSSE 🍫🍠

I’m not exaggerating when I say, this is easily my favorite dessert recipe right now. I was shocked when I made it the first time how perfectly creamy, sweet, and decadent this mousse is! And no, you can’t taste the sweet potatoes at ALL! 🙃

Save this recipe for Valentine’s Day! 💗

INGREDIENTS:
1 cup cooked sweet potato (skin removed)
1 cup full fat coconut milk or coconut cream
4 tbs cacao powder
3 tbs maple syrup
1 tsp vanilla
Pinch of salt
A few squares of @hukitchen chocolate

INSTRUCTIONS:
1. Bake sweet potatoes until soft to the touch. I find cutting them in half and baking at 425F for 40-50 minutes is perfect.
2. Add all ingredients to a high-speed blender or food processor and blend until creamy.
3. Add to a glass jar or bowl and add a chopped up @hukitchen chocolate bar on top.
4. Refrigerate for 3-4 hours (but if you can’t wait, it still tastes phenomenal as is!)

It’s like Cocoa Puffs but better 🤤 Sometimes you just crave a bowl of cereal (I can’t be alone on this one), but frankly, I would never even think of buying traditional cereal because it’s like having a bowl of sugar for breakfast 😳

I don’t know what it is about the marble swirls, but there just so satisfying 😍

This is an incredibly simple recipe and only requires two ingredients and comes together super quickly! I like to keep the bark in the fridge and enjoy it on its own or chop it up and serve it over ice cream 😋

INGREDIENTS:
1.5 cups of dark chocolate chips (I used @hukitchen chocolate gems)
1/2 cup white chocolate chips (I used @pascha.chocolate)

This would make a fun Valentine’s Day dessert! I love getting Jonah some fun Valentine’s Day treats and chocolate bark is one of his fave + @simplygum has become his new go-to!

I’m such a sucker for an extra chocolatey gooey cookie 🍪 And if you’re a peanut butter 🥜 fan, you’re in for a TREAT (pun intended 😉). I took my good old single serve chocolate chip cookie and made a few changes to make this the ultimate Double Chocolate Chunk Cookie 🍫

Plus, I added a @simplygum Triple Cacao Chocolate Date Bar for some extra chocolatey goodness! Simply bars are made with organic dates, organic dark chocolate, organic coconut, organic sugar, roasted almonds and sea salt 👌🏻

SAVE THIS POST FOR LATER‼️

• 4 tbs almond flour
• 1 tbs cacao powder
• 1 tbs peanut butter (or any nut butter)
• 1 tbs applesauce
• 1 tbs maple syrup
• 1/2 tsp baking soda

Mix all ingredients together and bake at 350F for 10-12 minutes. I highly suggest eating it right out of the oven while the chocolate is still melty 🤤

All too often we spend life waiting for the “right time” or a sign that now is the right time.

Instead of waiting to do something you’ve always wanted to do, take the time to design and plan out your life. Write down the exact steps you need to take to get there.

If you’re an OG follower, you know I’ve had a longtime obsession with @rebbl ❤️ I’m a big functional mushroom gal and @rebbl is one of the first brands that turned me onto them!

1.5 frozen bananas
Handful of frozen zucchini

CHOCOLATE CAKE {GF + V}🍫🫶🏻 🍰

The first time I made this cake, I wasn’t expecting Jonah to love it because he’s not a big chocolate cake fan. He was so obsessed with it, he asked me to make it
AGAIN! He says it takes like milk chocolate rather than dark.

It’s perfectly moist, fluffy, tender, and extra chocolatey with the BEST chocolate frosting ever 🤤

CAKE INGREDIENTS:
1.5 gf oat flour (make your own by blending whole rolled oats until finely ground)
2/3 cups @navitasorganics cacao powder
1 tsp baking soda
1/4 tsp salt
1/2 cup + 2 Tbs water
1/2 cup plant-based milk
3 Tbs @chosenfoods avocado oil
1/4 cup coconut sugar
1/4 cup maple syrup
1 tsp vanilla extract

FROSTING INGREDIENTS:
1/2 cup vegan butter (I used @miyokoscreamery)
1/2 tsp vanilla extract
2.5 - 3 cups powered sugar
3 tbs plant-based milk
2 tbs melted @hukitchen dark chocolate gems

INSTRUCTIONS:
1. Preheat the oven to 350F.
2. In a large bowl, combine all dry ingredients. Whisk to combine.
3. Add all wet ingredients to the same bowl. Whisk thoroughly until completely smooth.
4. Pour batter into prepared cake pan. Tap the pan on the counter a few times to release air bubbles.
5. Bake for 20-24 minutes. Test with a toothpick - it should come out clean when done.
6. Place pan on a cooling rack for 25 minutes.
7. Place a cooling rack or large plate upside down, on top of the cake pan. Flip the cake onto the rack or plate. Allow cake to cool completely before frosting (at least 1 hour).
8. Time to make the frosting! Beat butter and vanilla with an electric mixer high for a few minutes, until smooth and creamy.
9. Add 1/2 cup of powdered sugar at a time and mix until super velvety smooth. Add a tbs of milk at a time as well.
10. Add the melted chocolate and best until smooth.
11. Frost the cake.
12. Finish the cake off with shredded @hukitchen chocolate bar. Simply use a cheese grater to shave the chocolate on top of the frosting.
