Almond Butter Crunch Bars
Crispy Almond Butter Crunch Bars made with only 5 simple ingredients. This perfectly sweet and crunchy vegan treat is made with puffed cereal, almond butter, maple syrup, and dark chocolate. These no-bake bars taste just like a Scotcheroo, but have a healthier spin to them!

- 3 cups Puffed Cereal I used Cocoa Rice Crisps 365 Brand
- 2 Tbs Vanilla Plant-Based Protein Powder optional
- ½ cup Almond Butter + 1 Tbs
- ⅓ cup Maple Syrup
- 1 tsp Vanilla Extract
- ¼ tsp Salt
- ¾ cup Dark Chocolate Chips dairy-free
- 1 Tbs Coconut Oil melted
Line an 8×8 inch pan with parchment paper.
Add maple syrup, almond butter, vanilla extract, and salt to a bowl. Stir to combine.
Add the puffed cereal to the bowl and stir until the rice cereal is well-coated.
Spread the mixture in the pan and press down firmly with a spatula.
Melt the chocolate chips with the coconut oil in a saucepan and pour the melted chocolate over the almond butter cereal mixture. Spreading it evenly.
Put the pan in the fridge for about 30 minutes.
Cut into 9 bars (which works best with a large chopping knife) and enjoy! Store leftovers in an airtight container in the fridge.
