Ingredients

Apple Filling

  • 2 Large Honey Crisp Apples
  • 3 Tbs Coconut Sugar
  • 1 Tbs Almond Flour
  • 2 tsp Tapioca Starch
  • 1 tsp Cinnamon
  • ¼ tsp Nutmeg
  • 1 tsp Fresh Lemon Juice

Topping

  • ½ cup Rolled Oats
  • cup Almond Flour
  • ¼ cup Tapioca Starch
  • ¼ cup Pecans roughly chopped
  • ¼ cup Coconut Sugar
  • 3 Tbs Coconut Oil melted
  • tsp Salt

Instructions

  • Preheat oven to 350 degrees.
  • Grease a 10" x 7" or 6" x 9" baking dish with coconut oil.
  • Slice the apples very thinly.
  • In a large bowl, stir together the apples, coconut sugar, almond flour, tapioca starch, cinnamon, nutmeg, and fresh lemon juice. Spread evenly into the prepared baking dish.
  • In a separate medium bowl, stir all the topping ingredients together, except the oil. Once mixed, add in the oil and use your hands to mix together until crumbly, leaving some large crumbs for texture.
  • Spread all over the top of the apples and bake until golden brown and the apples are soft and bubbly about 50-55 minutes. Let cool for 10-20 minutes.
  • Serve with dairy-free ice cream! I love Vanilla Bean Coconut Bliss Coconut Milk Ice Cream :)

Notes

Store leftovers in an airtight glass container in the refrigerator for one week.
