Roasted Cinnamon Butternut Squash

- 4 cups Butternut Squash chopped
- 1-2 Tbs Coconut or Avocado Oil
- ½ tsp Cinnamon
- Salt to taste
Preheat oven to 400F
.
Peel and cut the butternut squash into 1-inch size pieces (if not using pre-cut squash)
.
Line a baking sheet with parchment paper
and spread squash evenly on baking sheet
.
Sprinkle with cinnamon, salt, and coconut/avocado oil
.
Bake for 40-45 min or until squash is soft golden brown
Optional: Garnish with fresh thyme for a little pop of color!
