Carrot Cake Oatmeal

Ingredients
  

  • 1 cup Shredded Carrots
  • ½ cup Rolled Oats
  • 1 ½ cups Almond Milk
  • 1 Tbs Maple Syrup
  • 1 tsp Cinnamon
  • ¼ tsp Ground Ginger
  • Dash of Nutmeg
  • 1 tsp Vanilla Extract

Toppings

  • Chopped Walnuts
  • Pumpkin Seeds
  • Extra Cinnamon
  • Shredded Coconut Flakes

Instructions
 

  • Add almond milk and spices to a pot.
  • Bring to a low boil then add oats, shredded carrots, and vanilla extract.
  • Turn heat down to low and cook for 20 min or until oats are thick and creamy.
  • Top with walnuts, pepitas, shredded coconut, and extra cinnamon!
