Guilt-Free Pumpkin Chocolate Chip Cookies that are healthy, vegan, and taste like pumpkin pie! Made with oat flour, almond butter, pumpkin puree, and a hint of maple syrup.

- 1 ¼ Oat Flour
- ¼ cup Pumpkin Puree not pumpkin pie filling
- ½ cup Almond Butter
- ½ cup Maple Syrup
- 4 tsp Pumpkin Pie Spice
- ½ tsp Baking Soda
- ¼ tsp Salt
- ½ cup Dairy-Free Dark Chocolate Chips I like Lily's or Enjoy Life brand
Preheat oven to 350F
.
Make a flax egg by letting the flax and water to sit for 10 min.
Add protein powder, almond butter, pumpkin puree, and maple syrup or honey to a mixing bowl.
Add the flax egg, then stir in chocolate chips.
Scoop into 1.5 - 2 in balls and gently press down onto a cookie sheet.
Bake for 10-12 min.
