Single Serve Chocolate Chip Cookie (Vegan)
A healthy recipe for single-serve chocolate chip cookies that are low in sugar! It’s ready in just 5 minutes, made with only 4 ingredients & contains 22g of protein!

- 3 Tbs Almond Flour
- 1 Tbs Vanilla Plant-Based Protein Powder
- 1 Tbs Almond Butter can sub any nut butter
- 1 Tbs Maple Syrup
- 1 Tbs Applesauce or Coconut Oil
- 1 Tbs Ground Flax optional
- ½ tsp Baking Soda
- ½ tsp Vanilla Extract
- 3 Tbs Chocolate Chips dairy-free
Preheat oven to 350F and line a baking sheet with a small sheet of parchment (you will only need enough room for 2 cookies)
Add 1 TBS of ground flax seeds and 2 TBS water to a small bowl. This will create a flax egg
Add almond butter, maple syrup and apple sauce or cocont oil, and vanilla to a small mixing bowl. Mix together.
Add vanilla protein powder, almond flour and salt. Stir together until a dough forms.
Form dough into one giant cookie. Flatten down slightly since the cookie won't spread.
Bake for 9-12 minutes or until golden brown. They should be super soft and chewy!
