Smashed White Bean and Avocado Open-Face Sandwich
This open-face sandwich makes for a delicious and healthy light lunch or hearty snack. It's packed full of healthy fats from avocado and protein and fiber from chickpeas.

- 1 slice Gluten-Free or Sprouted Bread
- ½ Avocado
- ¼ cup Cannellini Beans
- ¼ Red Bell Pepper
- 1 handful of Sprouts
- Salt and Pepper to taste
Toast slice of bread.
Scoop out half an avocado and put into a small bowl
.
Add ¼ cup cannellini beans to the bowl with the avocado
.
Season with a little garlic powder, pink Himalayan sea salt, and black pepper
.
Mash with the back of a fork until combined
.
Spoon mixture onto the piece of bread – don’t be afraid to pile it on!
Add slices of red bell pepper and a handful of sprouts.
