Gluten-Free Greek Pasta Salad

A gluten free, healthy greek pasta salad with a simple tangy lemon dressing. Packed with protein and fiber. Great for Summer parties!

Ingredients
  

Salad

  • 1 lb Gluten-Free Rotini Pasta or any shape of your choice
  • ½ Red Onion chopped
  • 1 Bell Pepper finely diced
  • 1 pint Cherry Tomatoes halved
  • ½ cup Pitted Kalamata Olives
  • 1 Cucumber quartered and sliced
  • ¼ cup Parsley roughly chopped
  • Salt & Pepper to taste

Dressing

  • cup Freshly Squeezed Lemon Juice about 2-3 lemons
  • 3 Garlic Cloves
  • 2 tbs Parsley finely chopped
  • ½ cup Olive Oil
  • ½ tsp Salt
  • ½ tsp Pepper

Instructions
 

  • Bring a large pot of water to a boil. Add the pasta and cook pasta until al dente. Set aside.
  • Chop up vegetables and add to a large bowl.
  • Make the dressing by adding all ingredients into a small glass bowl. Whisk together thoroughly.
  • In a large bowl, mix together the cooled pasta, red onion, peppers, tomatoes, olives, cucumber, and parsley. Toss gently with 1/4 cup of the dressing and mix. Add more dressing as needed. You may not use all of the dressing, but it stores well in the fridge.
