Gluten-Free Greek Pasta Salad
A gluten free, healthy greek pasta salad with a simple tangy lemon dressing. Packed with protein and fiber. Great for Summer parties!

Salad
- 1 lb Gluten-Free Rotini Pasta or any shape of your choice
- ½ Red Onion chopped
- 1 Bell Pepper finely diced
- 1 pint Cherry Tomatoes halved
- ½ cup Pitted Kalamata Olives
- 1 Cucumber quartered and sliced
- ¼ cup Parsley roughly chopped
- Salt & Pepper to taste
Dressing
- ⅓ cup Freshly Squeezed Lemon Juice about 2-3 lemons
- 3 Garlic Cloves
- 2 tbs Parsley finely chopped
- ½ cup Olive Oil
- ½ tsp Salt
- ½ tsp Pepper
Bring a large pot of water to a boil. Add the pasta and cook pasta until al dente. Set aside.
Chop up vegetables and add to a large bowl.
Make the dressing by adding all ingredients into a small glass bowl. Whisk together thoroughly.
In a large bowl, mix together the cooled pasta, red onion, peppers, tomatoes, olives, cucumber, and parsley. Toss gently with 1/4 cup of the dressing and mix. Add more dressing as needed. You may not use all of the dressing, but it stores well in the fridge.
