Detox Salad with Lemon-Ginger Dressing

Ingredients
  

Salad
  • 4 cups Mixed Greens
  • 1 cup Matchstick Carrots
  • 1 cup Purple Cabbage shredded
  • 1 Avocado sliced
Dressing
  • ¾ cup Lemon Juice freshly squeezed
  • ¼ cup Olive Oil
  • 1 inch knob of Ginger finely chopped
  • 1 Garlic Clove minced
  • 2 Tbs Honey or Maple Syrup

Method
 

  1. To make the salad, mix the greens, shredded carrots, and cabbage in a mixing bowl.
  2. To prepare the dressing, finely chop the ginger and garlic. Then add the lemon juice, olive oil, and maple syrup or honey to a glass container.
  3. Whisk together until thoroughly combined. You could even blend the dressing if you prefer it more smooth.
  4. Drizzle with dressing on top of salad .

Notes

Store dressing in an airtight container in the refrigerator for up to one week.
