Flourless Chickpea Peanut Butter Chocolate Chip Cookies

Secretly healthy flourless peanut butter chocolate chip cookies made with chickpeas, peanut butter, pure maple syrup, and dairy-free chocolate chips. You can't tell they’re made with chickpeas because they taste exactly like a chewy peanut butter chocolate chip cookie! The best part is that the chickpea cookie dough is vegan (and so delicious), so you can enjoy it with a spoon!

Ingredients
  

  • 1-14 oz Can of Chickpeas (or Garbonzo Beans) drained, rinsed, and soaked in water for 6 hours
  • 1 cup Smooth Organic Peanut Butter can sub any nut butter
  • ½ cup Maple Syrup
  • 1 ½ tsp Vanilla Extract
  • 1 ½ tsp Baking Soda
  • 1 cup Dark Chocolate Chips dairy-free

Method
 

  1. Preheat oven to 350 degrees. Line two baking sheets with parchment paper (if making small cookies, otherwise you will just need one baking sheet for larger cookies).
  2. Add drained chickpeas and honey or maple syrup to a food processor or high-powered blender (don't use a regular blender) and blend until smooth.
  3. Transfer to a medium-sized bowl. Add all remaining ingredients and mix until thoroughly blended. The batter will be sticky!
  4. Drop batter by tablespoonfuls onto prepared baking sheets. Bake for 12-14 minutes.
  5. Remove from the oven and set aside to cool for 10 minutes.

Notes

Store in an airtight container for up to a week.
