Ingredients
  

  • 1 Very Ripe Banana
  • 1 cup Almond Milk
  • 2 cups Rolled Oats
  • 1 Egg
  • 1 ½ tsp Baking Powder
  • 1 tsp Vanilla
Toppings
  • Maple Syrup
  • Blueberries

Method
 

  1. Place the milk, banana, and oats in a blender and blend until smooth.
  2. Add egg, baking powder, and vanilla. Blend until combined.
  3. Heat a griddle on medium heat and grease with coconut oil .
  4. Pour about ¼ cup of batter onto the griddle, forming the pancakes. If adding optional additions (chocolate chips, berries, etc.) add to pancakes at this time.
  5. Cook until large bubbles appear on the surface and the perimeter seems firm (a few minutes).
  6. Flip and cook for another minute or two, until both sides are golden brown. Repeat with the rest of the batter.
  7. Serve immediately with warm maple syrup.
