Guilt-Free Pumpkin Chocolate Chip Cookies that are healthy, vegan, and taste like pumpkin pie! Made with oat flour, almond butter, pumpkin puree, and a hint of maple syrup.

Ingredients
  

  • 1 ¼ Oat Flour
  • ¼ cup Pumpkin Puree not pumpkin pie filling
  • ½ cup Almond Butter
  • ½ cup Maple Syrup
  • 4 tsp Pumpkin Pie Spice
  • ½ tsp Baking Soda
  • ¼ tsp Salt
  • ½ cup Dairy-Free Dark Chocolate Chips I like Lily's or Enjoy Life brand

Method
 

  1. Preheat oven to 350F .
  2. Make a flax egg by letting the flax and water to sit for 10 min.
  3. Add protein powder, almond butter, pumpkin puree, and maple syrup or honey to a mixing bowl.
  4. Add the flax egg, then stir in chocolate chips.
  5. Scoop into 1.5 - 2 in balls and gently press down onto a cookie sheet.
  6. Bake for 10-12 min.
