Roasted Cinnamon Butternut Squash

This simple, warm, delicious Butternut Squash dish is sure to become a staple at your holiday gatherings. Simple, yet flavorful!

Ingredients
  

  • 4 cups Butternut Squash chopped
  • 1-2 Tbs Coconut or Avocado Oil
  • ½ tsp Cinnamon
  • Salt to taste

Method
 

  1. Preheat oven to 400F .
  2. Peel and cut the butternut squash into 1-inch size pieces (if not using pre-cut squash) .
  3. Line a baking sheet with parchment paper and spread squash evenly on baking sheet .
  4. Sprinkle with cinnamon, salt, and coconut/avocado oil .
  5. Bake for 40-45 min or until squash is soft golden brown
  6. Optional: Garnish with fresh thyme for a little pop of color!
