Method
- Add mixed greens to a large mixing bowl .
- Slice cherry tomatoes and cucumbers and add to the mixed greens.
- Add remainder of veggies to greens and sprinkle with hemp seeds .
- Add all dressing ingredients to a blender and blend until smooth .
- Drizzle salad with desired amount of dressing and toss until well combined.
Notes
If you're only going to eat half of the salad, divide greens and veggies into two bowls before adding dressing. This will keep the salad crisp.
