Spring Salad with Sweet Basil Dressing

This Spring Salad is filled with colorful, fresh veggies, creamy avocado, and homemade sweet basil dressing. Perfect as an easy lunch or light dinner, this spring salad is customizable with whatever fresh farmers market produce you have on hand!

Ingredients
  

  • 5 cups Mixed Greens
  • 1 cup Purple Cabbage shredded
  • 1 cup Alfalfa Sprouts
  • 12 Cherry Tomatoes halved
  • 1 cup Sugar Snap Peas chopped
  • 1 Cucumber sliced
  • 8 Radishes thinly sliced
  • 1 Bell Pepper sliced
  • 1 Avocado sliced
Vinaigrette
  • 1 Lemon juiced
  • ½ cup Olive Oil
  • 2 Garlic Cloves
  • 1 tsp Dijon Mustard
  • ½ tsp Honey or Maple Syrup
  • 8 Basil Leaves
  • Salt & Pepper to taste

Method
 

Salad
  1. Arrange the greens on a large serving bowl.
  2. Prepare vegetables and arrange in groups on top of the greens.
  3. Serve with the basil lemon vinaigrette on the side.
Vinaigrette
  1. Pulse everything together in the food processor or blender.

Notes

If you’re serving it individually, you can place the ingredients evenly in bowls as pictured above and then add the dressing.
