Superfood Breakfast Cookies

These superfood breakfast cookies are hearty, nutty, and delicious! The recipe is vegan, gluten-free, and ready in less than 30 minutes. These cookies have almonds, hemp seeds, flax seeds, oats, pumpkin seeds, almond butter and are sweetened with maple syrup.

Ingredients
  

  • 1 cup Rolled Oats
  • ½ cup Oat Flour grind 1/2 cup oats in a food processor
  • 2 Tbs Plant-Based Protein Powder
  • ¼ cup Chopped Almonds
  • ¼ cup Goji Berries
  • 2 Tbs Hemp Seeds
  • 2 Tbs Flaxseed Meal ground flaxseeds
  • 1 tsp Ground Cinnamon
  • 1 tsp Baking Powder
  • ¼ tsp Salt
  • ½ cup Nut Butter
  • cup Maple Syrup
  • 3 Tbs Coconut Oil melted
  • ½ tsp Vanilla Extract

Method
 

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. 
  2. Combine rolled oats, oat flour, protein powder, pumpkin seeds, almonds, goji berries, hemp seeds, flaxseed meal, ground cinnamon, baking powder, and salt in a large bowl. Mix together.
  3. In a separate bowl, add nut butter, maple syrup, melted coconut oil, and vanilla extract. Whisk together until evenly combined. 
  4. Pour wet ingredients into the dry ingredients. Mix together. 
  5. Scoop cookie dough into 12 balls and place on the baking sheet. Press each ball into flat cookies.
  6. Bake for 15-20 minutes or until the edges begin to golden. Remove from oven and cool.
