Prepare the tempeh by slicing it into 1/4 inch strips and sauteeing it in a little coconut oil on low heat until golden brown on both sides.
Toast the bread while you prep the other ingredients.
Slice the pepper and cucumber into thin strips.
Once the bread is toasted, spread on a generous layer of hummus and whole-grain mustard.
Mash half an avocado - spreading it evenly on each slice of bread.
Start assembling the sandwich by adding the tempeh, vegetables, and sauerkraut on top of the avocado, hummu, and mustard.
Slice in half and enjoy!
