Vegan Oat Date Cups

Vegan Oat Date Cups are no-bake and made with simple, wholesome ingredients. These cups have a delicious caramel center made from dates and a melted chocolate top. Gluten-free and naturally sweetened.

Ingredients
  

Date Caramel Layer

  • 20 medjool dates pitted
  • 1 tbs peanut butter
  • ½ cup water

Oat Base Layer

  • 1 ⅓ cup oat flour
  • 1 cup rolled oats gluten-free
  • ¼ cup coconut oil melted
  • ¼ cup peanut butter
  • 2 tbs Navitas Organics Chia Seeds
  • 2 tbs maple syrup

Chocolate Layer

  • 1 cup Navitas Organics Semi-Sweet Cacao Wafers

Instructions
 

  • Add the pitted dates, peanut butter and water to a high-speed blender or food processor. Blend until smooth. You will need to stop and scrap down the sides a few times in between blending. you should end up with a smooth, spreadable date caramel. Set aside.
  • Mix together all the oat base ingredients in a bowl, then press the mixture into silicon cupcake/muffin moulds.
  • Spoon the date caramel on top and pop into the freezer to set for 10 minutes.
  • While the cups are firming up in the freezer, melt your chocolate for the chocolate topping. In a small saucepan, add Navitas Organics Semi-Sweet Cacao Wafers (can sub regular chocolate chips or a chocolate bar) and melt on low heat. Stir continuously until fully melted. Depending on the chocolate you use, you might need to add a little coconut oil to make it more pourable.
  • Take the cups out of the freezer and top with the melted chocolate. Return to the freezer for another 10 minutes or until firm.
  • Store in the fridge or freezer.

Notes

It's very easy to make your own oat flour at home! Not to mention, it's much cheaper than buying it. Simply add rolled oats to a high-speed blender and blend until completely fine. Store in an air-tight container to keep fresh.
