Ingredients in Vegan Oat Date Cups

Medjool Dates

Oats

Peanut Butter

Chia Seeds

Coconut Oil

Maple Syrup

Cacao Wafers

Salt

The key ingredient is medjool dates. These will form the sweet, gooey caramel layer of the cups. Then you’re going to need gluten-free rolled oats, Navitas Organics Chia SeedsNavitas Organics Semi-Sweet Cacao Wafers (these add incredible richness and enhance the chocolate flavor), coconut oil, and peanut butter. You can sub any nut butter of your choice! Almond and cashew butter would be delicious as well.

Ingredient Spotlight: Chia Seeds

Chia seeds are your ticket to maximum omega-3s! You can add these tiny protein-and fiber-packed seeds to oatmeal, smoothies, yogurt, and countless recipes for a nutritious boost. I personally eat them daily in my morning smoothie and I love sneaking them into baked goods for an extra nutritional boost!

I love using dates in my desserts and really just eating them by the handful. They are such a great natural sweetener to use and I find when I use them in recipes like these vegan oat date cups I don’t need to add any other sweetener. The dates, oats, and chia seeds are all phenomenal sources of fiber.

These cups are no-bake and served cold straight from the fridge. The no baking part also means they’re a lot faster to make and you really can’t mess them up 😉

A must-try if you like peanut butter, chocolate, and caramel!

I hope you love these Vegan Oat Date Cups as much as I do! They’re perfectly sweet and chewy and a treat that feels indulgent, but is secretly healthy.
