Smoothie bowls should be their own food group if you ask me. They’re simple, delicious, nutrient dense, and so fun to make with all the toppings! Food tastes better when it looks good, right? Well, this Vanilla Date Smoothie Bowl is one good looking snack if you ask me.

I have a smoothie bowl every morning after my workout. It’s just what my body needs – the perfect combination of carbohydrates, fats, protein, and fiber. I love switching up the flavor and toppings to keep my taste buds happy. but I do have to admit that this Vanilla Date one is one of my favorites. It reminds me of a vanilla bean ice cream!

Smoothie bowls aren’t a health trend that’s going away anytime soon. These are here to stay! They provide amazing nutrients in one bowl and are just so darn pretty.

I’m going to let you in a little secret to making smoothie bowls extra thick and creamy. It’s all about adding two key ingredients: frozen zucchini and avocado. The frozen zucchini makes it nice and thick (while sneaking in a serving of vegetables) and the avocado makes it smoothe and creamy.

Now, let’s talk about the toppings (the best part!). The sprinkle of cacao nibs is my favorite topping on any smoothie bowl. It adds a nice crunch and antioxidant boost. Coconut flakes are a great source of healthy fats and look so pretty, I just couldn’t resist. Lastly, the drizzle of almond butter is the perfect balance of sweet and salty and is a must on this bowl.

Ingredients
  

  • 1 cup Dairy-Free Milk can use any nut milk
  • 1 scoop Vanilla Plant-Based Protein I like Sun Warrior
  • ½-1 cup Zucchini Slices frozen
  • ¼ Avocado
  • 1-2 Medjool Dates
  • 1 Tbs Chia or Flax Seeds
  • 1 tsp Vanilla Extract

Toppings

  • Cacao Nibs
  • Coconut Flakes
  • Almond Butter

Instructions
 

  • Add nut milk, frozen zucchini, avocado, protein powder, chia or flax seeds, dates, and vanilla extract to a high-speed blender. Blend until smooth and creamy.
  • Taste and adjust flavor as needed, adding another date or more vanilla extract for a most intense vanilla flavor.
  • Scoop smoothie bowl into a bowl and top with cacao nibs, coconut flakes, and almond butter.
