If you’ve been browsing any food blogs lately, it seems like everyone is getting on the healthy donut train, so I finally hopped on board! And I’m SO glad that I did. To be honest, I’ve never been a huge donut person (I’ll take a giant gooey cookie over a donut any day), however, these baked vegan donuts may have changed my mind.

I made one batch and thought to myself “WHERE HAVE THESE BEEN MY WHOLE LIFE?”. I was so pleasantly surprised!

This recipe is simple, requiring basic ingredients and 30 minutes to prepare! And they’re naturally sweetened and vegan!

Now, these are donuts that you can feel good about having for a post-workout snack (hello protein!) or a healthy dessert.

The glaze is optional, but in my opinion, totally seals the deal. Plus, you need a way to add all the fun toppings 😉 I used Power Up Goji Power Mix because I love the combination of pumpkin seeds, coconut flakes, and cranberries. You could also use cacao nibs, chocolate chips, nuts, etc. Be creative!

30-Min Beet Root Baked Vegan Donuts

These Baked Vegan Donuts are made with almond flour, protein powder, beetroot powder, sweetened with maple syrup and glazed with coconut yogurt. They're delicious and not your average donut! Made in 30 minutes.

Ingredients
  

Donuts

  • 1 cup Plant-Based Protein Powder (vanilla)
  • 1 cup Almond Flour
  • 2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1 Tbs Beet Root Powder
  • ½ cup Almond Milk
  • ½ cup Maple Syrup or Coconut Nectar
  • 2 Flax Eggs 1 Tbs ground flax seed + 3 Tbs water = 1 egg)
  • 2 tsp Vanilla Extract
  • 2 Tbs Coconut Oil melted
  • Coconut Oil Spray

Glaze

  • ½ cup Unsweetened Vanilla Coconut Yogurt
  • 2 Tbs Maple Syrup or Coconut Nectar

Instructions
 

Donuts

  • Preheat oven to 350 degrees.
  • Combine all dry ingredients in a bowl and whisk together.
  • In a separate bowl, combine all wet ingredients.
  • Add the wet ingredients to the dry and stir to combine.
  • Spray a donut pan with coconut oil spray and spoon batter in the pan. Bake for 15-20 minutes or until a toothpick comes out clean.

Glaze

  • To make the glaze, whisk ingredients together in a small bowl.
  • Once donuts are cool (about 20 minutes), remove from the pan, and place on a cooling rack.
  • Drizzle the glaze on the donuts, then top with your toppings of choice.
